Recipe
12 eggs
2 avocados
1 bunch green onion
½ bunch parsley
½ bunch tarragon
6 cups spinach
1 cup basil
¼ cup thyme
¼ cup lemon juice
1 cup avocado oil
Salt and pepper to taste
½ cup mayo
Steam eggs for 11 minutes, then chill in ice bath for 5 minutes.
Blanch herbs and spinach in 204°F water until bright green, then shock in cold water.
Blend herbs, lemon juice, and avocado oil until smooth. Add avocado, salt, pepper, and blend again.
Fold into diced eggs with mayo and season to taste.
